    We enjoyed this recipe, slightly modified from the original. In place of the beef, try using ground buffalo--just as healthy as the lean beef. Also, we didn't pick up any chipotle peppers, so I used a little bit of Tobasco chipotle sauce and some cayenne pepper. If you have adults or kids that aren't fond of the carrots, try grating them up. They will never even notice they are there!

    I made this for the first time to take to a Super Bowl Chili Cook-off at my church. I WON FIRST PRIZE!!! I've seen Ellie's show and like her healthy recipes. This chili is OUTSTANDING. I followed other reviewers' suggestions and only added enough water to rinse out my can 28oz can of crushed tomatoes (about 1/2 cup. I'll make this over and over again--it is simply the BEST CHILI ever!!

    I really enjoyed the ease of preparation and loved the final result. I did alter the recipe a bit by adding chili powder (1 tbs, 2 cloves of garlic and 8 ounces of beef stock in place of some of the water. Sorry, probably raised the calories slightly. Also, I used chuck roast instead of ground beef and let it simmer for a couple of hours, adding the beans 20 minutes before serving, or kickoff, whatever. It was spectacular. Thanks, it's a keeper in my recipe box.

    We started off the year trying to eat "healthier", but just got tired of the same old stuff. We decided to try the chili recipe and we loved it! It was even better the next day and with less heartburn! I did not find it "runny" as others stated either, actually thought it might be a little on the thick side! Next time I will use more chipotle and adobe sauce, and actually probably add a jalapeno in with the onions, bell pepper and carrots. I highly recommend everyone try this recipe!

    We loved this chili. After reading some very helpful comments, I made a few modifications - added 2 cloves of garlic, 2 tsp chili powder, 1 1/2 chipotle chile, can of mushrooms and a small can of tomato sauce with garlic along with the 28 oz crushed tomatoes. I used 1/2 can of each bean instead of the whole can (it was just too many beans for us, I used 1 1/2 cups of water and used 1.3 lbs of ground beef. We like some liquid in our chili so we can add crackers. The consistency was perfect. It was wonderful. My family loved it.

    I loved this becuase it is health for my family, it was fast to make and most of all it was great. I had to push it away from my self to make me stop eating it!!!!!!!!! thank you so much for this recipe.. I know that it will be made in my house for year to come.

    Definitely easy to follow the instruction and healthy.

    Like others I agree that it was very mild in flavor, so I added couple tsp. of chilli powers and dash of salt. I brought to a pot luck dinner and it was a huge hit. The receipe is easy enough to modify it if you want to add corns or other veggies.

    I tried this recipe before reading the reviews. I also added garlic, chili powder and an extra chipolte pepper. I did not find it to watery as others did. I made the chili early in the day and let it set on the stove so the flavors could meld together.
