    I love the combination of the sweetnes of the balsamic vinegar with the vegetables.

    I took this to a pot luck dinner and it flew off the table. The recipe is so simple that you can adapt it for any size group. I did cheat a little. I added diced red onions and some red wine vinegar. I let it marinate for a couple hours. Thanks Ellie for a guilt-free salad!

    Both my husband and I enjoyed this relish. However, I think the recipe would be improved if the salad were allowed to marinate longer in the oil and vinegar. That said, this recipe will definitely be a staple in my kitchen come summertime when bell peppers and tomatoes are in season.
