    What a great vegetable side dish, change up from lettuce salad. Lots of ways to add-on to this recipe. We grilled them as well. Yum!

    So simple, so tasty! It's a standard recipe in our household. Some Saturday mornings, we have it as breakfast with a side of fresh bread. Heavenly. Sometimes we add onions or feta. Sometimes we drop the olives or use grape tomatoes. I especially love when we use garlic olive oil. The recipe lends itself to so many variations.

    I didn't have very high hopes for this recipe, but it turned out delicious! I made it with Ellie's macaroni and cheese and it went together perfectly. Also, it was super easy to prepare and healthy!

    These are fabulous! I served them w/Ellie's Cowboy Steak and her Honey-Roasted Sweet potatoes... did everything on the outside grill...

    I rarely make meals for guests before trying them out first, however, I took a chance with this and it turned out fabulous. The flavors all mix up to make it such a great tasty dish. Next time, I will add a lot more olives into each pepper, since I think they will intensify the already great flavor of the recipe.

    This recipe did not sound like anything special; however I had a bumper crop of fresh tomatoes to use, and after reading the reviews, I decided to give this recipe a try. I made it nearly exactly as directed. I increased the amount of chopped calamata olives a little, as they are a particular favorite at our house. What a treat this recipe is! I have since made it several times, including for guests. It always reeives rave reviews. And, it is infinitely variable. I sprinkle the finshed peppers with either minced flat leaf parsley, or fresh chiffonade of basil, toasted pignoli nuts, or you can add goat cheest (VERY good! sprinkle with parmesan (the good stuff! even canned and rinsed black beans (not too many or any number of other things that appeal to you. Whatever you do, if you stay close to the original recipe, you will NOT be disappointed! This is a new favorite in our kitchen. Thanks, Ellie.

    When I first saw this recipe I thought ugh! But then I tried it because I love the ingredients. And that ugh turned into a YUM! Very good and the kids liked it.
