I made this soup the other night and it was delicious. It's very easy, but loaded with flavor. I increased the cumin and oregano slightly since I love those two spices, and traded out one of the cans of plain diced tomatoes for a can of Fire Roasted tomatoes for a little extra added flavor. Since I will be making this soup many times to come, I can imagine varying the recipe by adding many different ingredients such as chicken, black beans, corn, etc., but it is delicious just as is too! The rich sour cream is a nice contrast to the spiciness of this dish, and the tortilla strips and cilantro add a nice flavor and an attractive garnish as well. In the future, I will probably add diced avocado as a garnish too since it?s one of my favorite ingredients to go along with tortilla soup.

To add a depth of flavor, strain the tomatoes; place on a roasting pan, spray lightly with olive oil, sprinkle with a touch of salt and pepper, and roast for 15 minutes in a 450 degree oven. A little extra effort but well worth the time for added flavor.

This is really great. l t definitely makes a polished presentation with a bit of cilantro and dollop of sour cream with some sundried tomato tortilla strips.
I will make this again for my family on soup and sandwich night!
    thanks, Ellie.

I did not like this soup at all. It was very sour tasting. I love tomato soup but certainly not this one.

What amazing flavor this soup has!. I took a reviewers advise and used one can of fire roasted tomatoes with one can diced tomatoes. I also added shredded chicken after I pureed the soup and let it simmer another 10 minutes.
This receipe is a keeper! Easy and delicious!

I used 1 habernaro, (chopped fine w/ gloves on!, & 1 Anaheim instead of the jalapeno for heat. I added 4chopped plum tomatoes instead of one can of tomatoes, and used fire roasted can tomatos.
The tortillas were awesome sliced really 1/4 inch! I also added shredded chicken breast after pureeing. A good balace of flavors all the way round!

This soup was delicious....a very latin taste. I would suggest adding two, grilled chicken breasts to the recipe as it does turn out fairly watery. and instead of buying corn tortillas...regular tortilla chips work just as well : really yummy though!!

I normally prefer creamed soups, but I am trying to broden my horizons. After looking through the recipe with my wife we both agreed Betsy idea of using fire roasted tomatos would be better. I loved how fast and easy this was to make, it went awsome with our pressed sandwitchs. Thanks for a great recipe.

Really good, and super easy! I used two cans of fire roasted tomatoes, which gave good flavor, but bumped up the salt content. Next time I'll make sure to use at least one can of no-salt tomatoes. Otherwise, I thought it was great. It could use a little more heat for my taste, but was tasty as is, too. I like the idea of adding some black beans...will try that next time, too. Thanks Ellie!

Here's why I only gave this 4 stars...in my opinion, five stars is reserved for a recipe that needs only minor altering, if any at all.

This is a good recipe, and can be made into something really great, but with some major modifications. On it's own, it's rather bland. I added grilled chicken and frozen corn, and it was pretty good. Next time I'll add more spice (I didn't find it spicy at all!, another jalapeno, and maybe some rinsed black beans. I'll definitely make again, and will continue playing with it until it's a really great soup!
