    My hubby just made tacos the other night and I was looking for a way to use the remaining corn tortillas in the refrigerator. I thought of tortilla soup and looked it up the Food Network and this recipe struck me right away because I don't have to go to store for a missing corn ingredient which is needed for most of the tortilla soup. I used fresh tomatoes though instead of the canned ones and also added chicken strips. Before I added the chicken, I pureed some of the mixtures and put it back in. Hubby liked it very much and asked me to keep the exact recipe so we can have it again and again. Thanks FN and Ellie!

    I first tasted it before blending and it was delicious. After partially pureeing, the texture seemed to be a little off for my palate and I felt it had a much different taste. However, it seems as most of these "tortilla" soups follow a similar recipe and I figured a little tweaking was in order. I completely pureed the soup, put it back on the stove, added some cilantro to the pot and then about 2 chipotles in adobo sauce. I gave it another quick taste and I think I'm on the right track.

    I made this substituting one can of tomatoes with a can of Rotel with chiles. It was very spicy and very good. I served it to my kids with cheese quesadillas and they loved it. Definitely will make again...

    This was fantastic and I love the kick from the jalapeno! If you do not like spicy food, cut back on the jalapeno or eliminate it. I make the kids their own batch because of the heat and just freeze leftovers. Perfect.

    I've made this recipe about 5 times because it's so good and so good for you! Trader Joe's used to have a tomato corn chowder soup that I loved but was eventually discontinued. Since then I've been looking for something similar until I came across an episode of this show so I had to try it out. I pretty much follow the recipe except sometimes I'll add a little more cumin and one more jalapeno for the extra kick. Also, I add about a 1/4 cup of corn before blending and 1/4 cup after blending. I top the soup with the tortilla chips and avocado and serve with cheese quesadillas. This is one of the few soups my boyfriend loves and always asks for seconds :.

    For a spicy alternative, substitute a dash of cayenne pepper for jalepeno, plus coriander, and paprika. For added protein, add white beans and shredded chicken. Thanks Ellie Krieger for a fantastic soup!

    My only suggestion would be to cut back on the Cumin and eliminate the jalapeno if you don't like spicy foods, because this will chap your lips! Other than that, though, this dish tastes great and is a nice change for something different!

    Absolutely wonderful recipe! It's so light, fresh and filling! Tastes like the best comfort food with a great kick of spice. I would be careful with the jalapeno though, we used a pretty small one and it brought quite a bit of heat.
