Ingredients
- 1 1/2 cups chopped, unsalted cashews (8 ounces)
- 3/4 cup chopped, unsalted macadamia nuts (4 ounces)
- 1/3 cup chopped dates
- 1/3 cup chopped dried papaya
- 1/4 cup chopped crystallized ginger
- 1/4 cup unsweetened shredded coconut
Directions
Toss all of the ingredients together in a medium bowl.

this is healthier than eating a 270 calorie candy bar loaded with sugar. i personally would rather eat this than a package of over sweetened candy any day. substiutute.....these are only guidelines. i personally like the mixed she has made. however a chef can not please every one. there are bound to be complaints. it is written we sometimes need to treat ourselves...i call this snack my special treat. far better than eating other things.

I thought this was a great tasting mix. I made a couple of substitutions though. I used almonds instead of cashews, my store didn't have dates so I used pineapple rings (chopped, and I skipped the coconut. So in the end it was almonds, macadamias, papaya, pineapple and ginger. I intend to make this again only next time I think I'm going to double the amount of fruit.

Just because this snack is not one of those 100-calories altered everyday snack pack does not mean that it is unhealthy as the first reviewers stated. I don't think it would be beneficial to cut out macadmia or cashew nuts just because they are high in fat. Not all fat is bad for you and I'd rather have the health kind from a raw nut than any snack pack on the market. This mix is delicious and the crystallized ginger adds such a nice bite to it; I always have one with me for those long days on campus. I'm not a health nut, but I do watch what I eat and appreciate Ellie's help. (No matter what the ignorant might say
