Ellie: This is a great recipe. I have made minestrone soup, but this beats my standard made-up recipe. Very flavorful, yet a light and very satisfying meal. I'm sure I will be making this a lot in the future. I recommend this recipe to ALL.

I made this soup for an office luncheon. I prepared it the night before and then just reheated it in a slow cooker then next day. It was wonderful. The office raved. I showed everybody the recipe here on food network and know that they will make it for their families. I did tweak this a bit. When I added the beans and spinach, I also added some red pepper flakes and a southwestern chipotle seasoning to give it just a little kick.
Ellie, you are great! This recipe helped me to get my family to enjoy eating healthier.

I've made my own vegetable soup from time to time, but was trying to find a healthy recipe, so I gave this a try. I followed the recipe exactly, however, threw in some chopped turkey smoked sausage just to make sure my picky kids would eat it. I browned it for a few minutes, then threw the veggies in and continued from there.
This almost takes no time at all to prepare. If you prep the veggies beforehand, it would probably be even easier.
The kids - and the grown folks - thought the soup was really good!
*A tip - if your family doesn't like beans, I'd suggest mashing the entire can. My Daughter said the only thing she didn't like about the soup was the beans. You couldn't even tell the mashed ones were in there.

I just finished my second bowl of soup. It is so good!!! I made a few changes, I simmered my veggies a little longer (10 min and added a second can of beans. And I didn't chop my spinach, it wilts so I didn't see the point. This soup was so easy to make and is very satisfying. And it's good way to get your days worth of veggies in. I will definitely be making again.

I really enjoyed this soup. I actually forgot to pick up the tomatoes required in this recipe so I substituted it for an 8 oz can of tomato paste I had in my pantry. It provided some really great flavor. I am certainly going to be making this soup again very soon!

I was unsure about this recipe, but it really was delicious! I did what others suggested including adding an extra can of mashed beans which really added more oomph to the soup as well as extra vegetables. We served it with grilled cheese on garlic bread (although it could have easily been it's own mean and it was a hit!

I love this soup. Excellent flavor, very filling, super easy, and healthy. I did add some rosemary as the other reviewers suggested and I think it did add some more flavor.

This soup was such a great vegetarian dish, with all of the vegetables you wouldn't even know it didn't even have any meat! I cooked it for my family on a chilly sub-zero night and everyone absolutely loved it. It was very flavorful, and all of the veggies were great. I made some slight changes: I left out the sage, added a can of garbanzo beans, and let the soup simmer for awhile longer than the cook time said, and it was still delicious! And super easy to make! A definite winner that I will be cooking up for my family again.

My husband and I really enjoyed this soup. I do think another can of beans would make it more hearty. Also I added a red pepper to it - more veggies the better! I froze two containters for us to enjoy for a quick, healthy lunch. Definitely will make this again.

Oddly enough I live about 30 min from Lori the last reviewer and don't know her, but yeah its cold here today. I used a can of diced carrots - (low on time and didnt add the zucchini because they wouldn't eat it. I did add an extra can of beans and a little more broth and they all loved it. I floated some crostini on top with some parmesan.Next time I think I will add the Italian sausage like anothe reader suggested
