    Oddly enough I live about 30 min from Lori the last reviewer and don't know her, but yeah its cold here today. I used a can of diced carrots - (low on time and didnt add the zucchini because they wouldn't eat it. I did add an extra can of beans and a little more broth and they all loved it. I floated some crostini on top with some parmesan.Next time I think I will add the Italian sausage like anothe reader suggested

    This soup was excellent.

    I made a few minor modifications to accommodate what I did and didn't have in my pantry. I didn't have any spinach, so I used cabbage which I sliced thinly.

    Instead of regular diced tomatoes, I used a half can of diced tomatoes with green chilis which highly complimented the flavor of the soup - gave it a nice little kick. I also wanted a bit more starch, so I added a small-diced potato.

    I also did not have any zucchini, so I just left it out, which was fine. I love zucchini and will be sure to use it next time as I am sure it will be very tasty in the soup. The only parmesan cheese I had was Kraft grated, so we made due with that. I can't wait to try this with a parmesan rind in the pot as another reviewer suggested.

    We all loved the flavor and heartiness of the soup, even my 10 year old son. He pronounced it "Very tasty for such a cold day." (It's about 15 degrees here today and quite snowy.

    I served the soup with Chili Rubbed Tilapia (recipe available on this website, which the soup complimented beautifully, and some simple home fried potato chips.

    This recipe is easy to make, flavorful, quick to make and easily adapted to your pantry as well as to your family's tastes. Highly recommend!

    This soup is ok and maybe I missed something in the recipe. I think if you add some chicken or possibly some Italian sausage it would skyrocket the taste and appeal of this soup. Other then this is an average soup,

    That's okay, though. I'll put some on tomorrow. I added some chicken and ate this Christmas eve. Very delicious. I would like to make this a holiday tradition! I would like to try this with some rosemary instead of thyme/sage. Enjoy this with a hot piece of bread!

    Easy, needed a bit more flavor, I added red pepper flakes to my bowl. As far as soup goes, I am so happy to be making one with almost no sodium. I used vegetable broth and was happy with the flavor. I also used red kidney beans and it was good. I'll be brown bagging this one for a while! Thanks Ellie!!

    I've made this soup several times..it is really easy and tastes very good. I serve with panini sandwiches of portobellas sauteed in balsamic, caramelized onions, roasted red peppers, basil and mozzarella. Makes for a great dinner. YUM!

    I'm a college student, so I don't have much time to cook. This recipe worked out very nicely because the most time consuming task was just chopping the vegetables! I've had this soup for three meals now and I still want more! I added some rosemary to go along with the tuscan seasonings and it was absolutely amazing. I would definitely recommend trying it.

    I made this soup and brought it to work for lunch as a side dish. The soup is hearty and just perfect for a little pick-me-up warm lunch in the middle of the day. At the same time, it isn't too heavy that would make me feel sleepy after lunch. I only spent less than half an hour in the weekend making it, already save a lot of money not lunching out, and more important, feeling better. Love all Ellie's smart and healthy recipes!

    I made this soup for my family and everyone loved it! I agree with some of the other reviews, adding some more vegetables would be good. Also, the beans really made the soup but they tended to sink to the bottom and you would not get any in your soup until the very end. I suggest to make sure you have plenty of beans scooped up for each helping. Thank you.
