    I love to make soups and when I finished this one,which was OH SO EASY, by the way, it went within one vening among four people, with requests for more the next day. Used up left over pasta shells and added swiss chard instead of the spinach. This one will stay for a very long time!

    Such a versatile and low-maintenence soup!
    I added another clove of garlic and improved a bit on spices (used a bit of herbs de province and rosemary and was very pleased with the result I also used garbanzo beans instead of cannelini, just to avoid a trip to the store. It sounds odd, but it ended up tasting fabulous. I also discovered that this soup develops a fuller flavour if left to simmer, if you have the time. Foolproof!

    This soup was hearty and very flavorful! We added a few pepper flakes for spice but the rest was scrumptious. Very versatile recipe too.

    I loved how easy this soup was to make. It is so versitile. I may try it with chicken & small pasta like some reviews suggest. I would add more garlic & beans and also simmer a little bit longer before you add the zucchini and spinach so the veggies are a little more tender. Just my personal taste. But thats what great about this recipe. You can add what veggies you have on hand & tweak the seasoning to your likes. Thank you Ellie for this healty & tasty soup!

    This is a great base to play around with. Next time I think I'm going to add chicken and a little less thyme. I may add some different veggies as well. I did let the veggies cook a little longer than the recipe called for. Very good. :

    Easy to make and enjoyed by the whole family. Made exactly as directed but, you can't go wrong adding extra veggies or a handful of elbow noodles for the kids.
    This recipe is a keeper.

    This was a recipe I was hesitant in making as that I HATE beans. I am thankful that I did though. Just the smell of this soup cooking was heavenly. I modified the recipe a little and added some left over stalks of napa cabbage from another meal. My finicky husband loved this soup, he was honestly upset when we ran out.
