    The taste is super! I find most soups, especially healthy ones, unfilling. But this soup was very satisfying and I didn't miss the meat one bit. My husband was absolutely crazy about it and has already asked me to make it again. He thinks every meal should include a steak and something smothered in butter or mayo, so that says alot!

    I added a little bit more salt and some cooked chicken breast... but other than that, I followed the recipe exactly. I've always been afraid to make soups, but this soup was quick and easy...and delicious! My husband really enjoyed it as well. We will definately make this again!

    I just bought Ellie Krieger's cook book and my mother and I made this soup. I couldn't believe how tasty and how quick and easy it was to make. You can actually taste every vegetable. Every morning we pick a recipe from her book to make for dinner.

    I made this soup for the first time & my son tasted it & loved it. He couldn't get over how great it tasted. I didn't tell him it was healthy, too. By the way, my husband never got to tsste the soup the first time. I had to make it again. I love that it is easy, so delicious & low in calories.

    Needed something to serve to a crowd of people, several of whom had dietary restrictions. I used vegetable broth for the vegans. This got gobbled up. Absolutely delicious and so easy to make. Can't wait to make it again.

    This soup is SO GOOD! I've been making a big pot every week. It's chocked full of veggies so you can have a bowl whenever you're feeling a bit hungry and not feel the least guilty. It's also great with chicken to make a complete meal.

    I liked this soup as an easy dinner. It's not very complex, but it satisfies. I didn't do the carrots or celery. I also didn't mash the beans since I wanted a more brothy soup. I also added in a small pinch of dried herbes de Provence in lieu of the listed herbs and I whisked in a tablespoon of Dijon mustard as it finished cooking. I think that added a nice layer of freshness. It was very good.
