    Only one word will describe this...OUTSTANDING, although I used regular tomatos and beans.

    I put everything in the crock-pot, without mashing any of the beans. I added a little crushed red pepper flakes for some kick. Very good on a below freezing day! It just had really good flavor.

    This is a wonderful tasting soup and so easy to make. You could even add one crumbled turkey sausage if you miss the meat. The Turkey Store sausages are 8 pts. each, so divide that by the 8 servings and you are only adding 1 pt. to the total. Thanks Ellie! Keep those great recipes coming...M

    This is a very good recipe. I made it exactly to recipe except I subbed butternut squash in for zucchini due to preference. Even though you have to chop up a few things, the soup pulls together very quickly. It is tasty and filling. Next time, I will add more garlic and more herbs to up the flavor a bit, but it's a good, solid recipe as is. I may also add more cannellini beans for more body, but that's what makes this a great recipe - easy to adjust to your own taste and still healthy, yummy and filling! Thanks Ellie!

    This soup is so good. I could not wait to eat more the next day. It was even better the next day. I had a sweet potatoe so I added it to the soup.

    I did most of this in my slow cooker and even added a few more beans and extra broth & seasonings so it wouldn't simmer down to nothing. It was excellent and my soup was ready for me at the end of the day. If you like your veggies more crisp, then you need to add them in the last few hours, but with my family it was super the way it came out.

    Lately I've become obsessed with soups, making them on sunday and having them all week. this was super easy and so so flavorful.....i wouldn't change a thing!!!

    I've made this at least 10 times and we love it! It's a great way to get veggies into the kids. I put a bay leaf in as it's suppose to help minimize gas from the beans; however, I then take out the bay leaf and use the stick blender for a few pulses to bring the soup together more. I then add in the spinach and then a cup of very small pasta and let simmer for another 10 minutes or so. The whole family loves this recipe!

    I'm a student who doesn't cook a lot and this looked easy. I added a little extra garlic and some extra vegies. It was so good I ate two bowls. Mom couldn't have made it better! Thanks Ellie, can't wait to try more.
