Very good soup. It was insanely filling! The serving size was much too large for both me and my husband! This recipe could easily feed 8+. I used vegetable broth, however will try it with chicken broth next time as it seemed a little bland. Also, in the future I will use kale instead of spinach.

Very, very good. Subbed the cannelini beans for black beans and added noodles and potatoes. Only wish there was a little more broth since the noodles and potatoes seemed to absorb all of it. Definately going to add more broth next time.

I've made this recipe many times. It is perfect as is but I like to mix it up every time. I have added mushrooms and green beans; substituted escarole or cabbage for the spinach; and used dried italian seasoning for the fresh herbs plus a pinch of red pepper flakes. I've added meat: chicken or turkey italian sausage; ham; and kielbasa (I saute them first, remove, then add veges. Return to pot when you add the broth. I like to double the recipe to get 8 dinner servings (use 12 cups chicken broth and add 16oz can of V-8. Delicious and filling!

Delicious. We replaced the beans with cubed potatoes. Came out great.

Delicious meal. Was hesitant at first since there was no meat involved. But dang!!!! It was delicious. Made it for the wife cause she was sick. Thought she was not going to eat much, but she devoured every single drop. She wanted more, but said she'll have some more later instead. Great!

Loved this recipe! Easy to prepare and was a delicious meal on a cold night. I didn't have sage, so I added more fresh garlic and instead of Parmesan cheese I topped with Romano. Fabulous!

I fit the common single, male bachelor stereotype. I can't remember the last time I cooked a meal. The last couple years has been fast food and takeout. I finally decided that I need to start eating healthy and getting into the habit of cooking. I stuck to this recipe exactly as described and as embarrassed as I am to say it, I nearly started crying after the first few bites. I'm really excited about this new life of preparing and cooking fresh meals every day. This meal was incredible!

Fantastic recipe!!! Easy, healthy, but most of all delicious!! I've made this twice so far and it doesn't disappoint! Even my carnivorous husband loved it and was asking for seconds and thirds!!! I stuck to the recipe exactly except that I added a little more garlic. The first time I made it with dried herbs and the second with fresh. Both versions came out great! I would suggest doubling the recipe so that you can have leftovers for later. I will definitely be making this repeatedly throughout the fall and winter!

Well, I made this based on the reviews & overall rating. But, I was disappointed. It really lacked taste. I used chicken broth, used three garlic cloves and mixed the freshly grated parmesan into the soup as it cooked - but otherwise I stuck to the recipe. I even let it cook down a bit to condense the flavor and it still needed something. It was a little better two days later, but I'll make some major adjustments if I make this again.
