    My husband and I agreed that this soup is absolutely delicious! I averaged 1 cup each of the chopped veggies because that's what each veggie yielded and that was not at all too much. This soup is a "light weight" so I recommend serving it with a sandwich or salad if so inclined. For a heartier soup, I recommend adding just before serving some precooked pasta, such as Diatalini. I didn't have sage so I left it out.

    Wow. Made this soup today after returning from the farmers market. I did add a handful of macaroni pasta, but kept to the recipe otherwise. Easy and satisfying.

    I love this soup! It is so good! A wonderful comfort food! It's a good starter recipe to add or take away from to adjust to your taste. Great with Chicken added!

    Very easy and delicious. Like other reviews I used kale, 2 cans of no salt added fire roasted tomatoes and homemade vegetable stock. I did not use zucchini because I'm not a big fan of it. Will definitely make this recipe again!

    I made this for a cooking lesson I was teaching, and everyone loved it! Also instead of spinach I used kale, came out great! I plan on making it at home for my family.

    Very tasty, quick and easy to make. Fresh sausage tortellini was a nice addition to the soup. We added a dash more kosher salt and a light covering of freshly ground white pepper after tasting the end product.

    I've been making this soup for a few years now, ever since I got Ellie's book. So easy and delicious! Not to mentions healthy! I use kale instead of spinach & fire roasted tomatoes. Everyone from my boyfriend to my co-workers love this soup! Ellie, you're the bomb!! :-

    This dish has become a staple in my family. I make it at least twice a month. My husband and 18-month-old baby love it. I do add 2 cans of beans. It's perfect.

    Delicious. This guy knows what he's doing.

    I made this with a yellow squash instead of zucchini and it turned out perfectly fine.
