This recipe appeared in our Sunday supplement, and I saved it to try. It turned cold last night, so I thought tonight was a good time to try it. WOW and WOW again, it was wonderful, and a breeze to make. I used canned navy beans, which I drained and rinsed before using. Just the two of us, so I had plenty left over to freeze and have for another time. You really should try this recipe. My new best soup.

Awesome! I couldn't believe I made something this good! I am making it again next week. I couldn't find low fat beans so I used regular Goya. Loved this soup!!!!!!!

Quick, easy, and delicious. I didn't have fresh thyme or sage so I used dried and that worked fine. I also added half a can of diced potatoes.

I've already made this recipe three times since discovering it less than a month ago! It's a great, quick soup and the perfect meal for a busy person who doesn't have much time to cook. It doesn't take long, and I can take it to work with me to eat for days. I have it with some crusty bread to make it a little bit more filling, but it's pretty hearty for a vegetable soup.

Very good! Hearty and tasty - just the right mix of herbs & veggies. I will admit I don't see the need to mash some of the beans but that doesn't change the taste. Next time I will add some whole wheat pasta for an even heartier meal.

This is a keeper and have shared it with my mom who makes it all the time! You can't really mess this recipe up (I've been know to do that. I have all three of your recipe books and enjoy learning how to stock my cupboard and eat healthy versions of all my favorites. Thank you Ellie!

This recipe was so easy to make and was ready very quickly! My mom said she didn't like the sage taste. (I loved it! I added an extra celery stalk and instead of 2 cups of spinach, I used the rest of the kale in my fridge! Very hearty and perfect to make Sundays for lunch for the week! I'd like to make it next time with mushrooms and serve with warm biscuits.

I agree.. great recipe and so easy. The changes I made: I used 2 cans of beans, one mashed one whole, and toward the end, I added the mashed beans, and then used the immersion blender about 5-6 times to thicken up the soup a bit... and then added the whole beans and spinach for the rest of the cooking.
Just yummy and so healthful too!

So easy and so tasty! When we entertain, I order a large vegetable platter (which is way overkill and hope no one nibbles. Then I get to use all the fresh veggies for this soup! YUM! This recipe is easy to follow and allows for variation without problem.
