    Love love love this soup!! Even my picky must have meat husband loved it! I had to omit the sage and used dried beans instead of canned, otherwise followed the recipe to the T!

    My entired family, the 5 of us, absolutely LOVED this dish. The only thing different that I did was add potatoes. Definately a keeper.

    Deeeeeeelicious! 2hours later and I'm still full. I added mushrooms to it. Great quick meal.

    I added a small cupful of teeny bow-tie pasta. Next time I plan on adding less tomato but overall, delightful!

    Have been making Ellie's dishes for a while, and this one did not disappoint. My entire family enjoyed the soup. Even my toddler ate it without a complaint. Made it again and added 1/2cup of cooked Farro and sweet potatoe to the original recipe. I also made BHG's Wine Crackers. The meal was a hit, thanks Ellie!

    Wonderful soup. I threw in a few handfuls of egg noddles when it came to a boil and waited 5 minutes before putting in the beans and spinach. It's great with some crusty bread and butter. I was surprised at how tasty this vegetable soup was. We will definitely make this again.

    Excellent! The carrots & tomatoes I used had a hint of sweetness which added great flavor to the soup. I added 4 small diced Yukon gold potatoes & sweet frozen corn. I did not have thyme or spinach so I used fresh flat leaf parsley & the soup was delicious. My husband had 2 bowls & did not miss having meat. : Thanks Ellie for a tasty & healthy soup.

    This is a great soup recipe! My son, who doesn't eat vegetables, tried it and wanted a second bowl. I added a small can of green chiles and a can of diced tomatoes in sauce for a tomato broth flavor and it turned out great. Also, very easy to make.
