The dressing is good-for-you velvet! What a nice improvement to this classic salad. Especially good with sprouted grain tortillas.

Overall I liked this recipe, but it needed a little something else to perk up the flavor. It was a little too tart for my family. I added a little Splenda and curry powder to the leftovers to balance the lemon and yogurt and it was very good. Also, I let my yogurt (regular, not Greek drain for over an hour and it still wasn't very thick, so allow extra time for that.

I brought this chicken salad for lunch today and used a whole wheat tortilla from Trader Joes. I did not have regular mayo, just light..I think regular may would give it just a little more richness. The thyme seemed out of place...I would leave it out and use another herb or maybe use dried for a more subtle flavor. I have never used mustard for a waldorf salad before and thought it was an odd addition...I will probably put in half of the recommended amount next time. All in all, it was a good recipe though.

I just made this for lunch for myself and a couple neighbors and it was very easy to make. I broiled fresh chicken breast with sea salt and pepper for 12 minutes and then let rest while I prepared the rest of the meal.

Have to remember next time to let the Fat Free Greek Yogurt drain for 30 minutes before hand so I don't have to wait. The dressing is VERY good...as good as her Ranch dressing recipe.

Just took a couple minutes to roast the walnuts but I've learned that is worth the wait. I ran out of wraps and put my portion on fresh whole grain bread - it was VERY good.

I put a little extra lemon in because I like the TANG of it.

It was a huge hit for our lunch. Served with homemade lemonaid since I had some extra lemon.

YUM without feeling guilty! I had the same sandwhich at a french restaurant yesterday and this was so much better and SO much healthier!
