    I made this recipe with fresh artichoke hearts and fresh spinach - it was very green! I also garnished with shredded spinach on top.

    I substituted miracle whip for mayo and shallots for onion, as that is all I had and it made it great!

    The only reason this recipe is not 5 stars is its fat content - but it sure is delicious!

    ...but now am a believer in this recipe! As most do, I have a very reliable old standby spinach/artichoke dip recipe that I've been using successfully for years. However, I am always looking to perfect recipes and decided to try this, despite being hesitant on what it would actually taste like. I was wery pleasantly surprised. I do admit to adding fresh lemon juice while mixing all other ingredients, and sprinkled toasted panko on top of the finished product. Toasted some pita points and voila! It was completely gone at the party I brought it to and no longer have use for my heavier, much oilier, standby.

    Yet another attempt to deceive uninformed people ---- With 70% of the calories from fat, you'd do better pigging out on Krispy Kremes, or another delight. --- Shame on Food Network and the false hostess for allowing these unhealthy recipes to appear under a misleading show.

    There are two kinds of spinach and artichoke dip in the world: The really runny kind that bears more resemblance to soup than to a dip and usually arrives in industrial size batches in crockpots to parties and potlucks; And then there's the wonderfully fluffy, tangy kind that almost posseses a soufle-like quality. This dip is of the latter kind. If you are looking for spinach soup, look elsewhere. This recipe is very similar to one florentine artichoke dip that I procured from another website and have been making for years. I have found my new holy grail spinach dip. Although I always received raves on the other one, it always seemed too heavy and greasy. This one is fluffy, flavorful and perfect and contains half as much fat and calories as the old one and the serving size is larger to boot! I did add a squeeze of lemon juice for some tangy zip and I used Parmesan instead of mozzarella just because I prefer the taste of it. I highly recommend you try this recipe, you will not be disappointed!

    Thanks again for a wonderful recipe Ellie! I took this over to a friends birthday dinner this weekend and it was a total hit! This recipe is not greasy feeling like others I have tried and you actually feel good eating it! I did add a little cheese to the top at the end of baking and let it brown for a little more richness.

    This recipe is a keeper! It was very easy to make and delicious! I topped the dip with some extra cheese before placing it in the oven. My husband loved it!
