I love making this on Sunday mornings for my family. I use fresh blueberries (room temp instead of apples.
Also, I generally don't keep buttermilk on hand, but here's a great sub: In a 1-cup measuring cup, add 1 Tablespoon of fresh lemon juice. Top the lemon juice with with skim, low fat or whole milk. Stir and let sit for two minutes. After two minutes, your milk is both acidic and curdled

Tasted great to me! I did not have any buttermilk at hand however did replace it with 1/3 cup of almond milk, added cinnamon for flavor & instead of 3/4 cup of whole wheat flower I made it 1 full cup and the regular flower as 1/2 cup. Absolutely loved it, barely a difference. I topped one pancake with syrup and the other with a tsp of peanut butter, perfect combo!

Good recipe. I agree with previous posters that the recipe, as is, would be a tad on the bland side. I added cinnamon to the apples and used coconut oil for the pan. I also added chopped walnuts to bump up the protein content. I used 100% whole wheat flour (prairie gold variety.and they came out fluffy and yummy.

Made a few changes to increase the protein and reduce the sugar. Substituted 1/4 c of flour with coconut flour and sauteed apples in coconut oil with cinnamon. I also blended the ingredients and poured over the apples and baked it in the oven like a German apple pancake. I figured it would be easier with guests than to stand over the stove. It is a bit bland, but nothing syrup can't solve. Will be making it again for houseguests!

Since this recipe had such great reviews, I was surprised how bland they were. I understand that whole wheat pancakes are denser than regular pancakes, but my husband and I really did not like the texture.

Really yummy! I boiled the apples in some water and then added them right to the batter, and I also added ground cloves, cinnamon, and nutmeg. My family didn't even know they were whole wheat--they were soft and fluffy and tasted so indulgent!

SO easy and so yummy! I used nonfat yogurt instead of the buttermilk because I had it on hand, and they turned out beautifully! Next time I may add a sprinkle of cinnamon just to see how it tastes.

I've been making these pancakes by Ellie for years. They are my favorite thing to have for breakfast. I love when I find something that is both delicious and healthy. Yummy!
