These are very good! I added some cinnamon and vanilla (about 3/4 tsp of each, and a bit of brown sugar (about 3 tbsp to make sure they had enough flavor. To me, if the batter doesn't taste good, the pancakes won't taste good so I thought they needed that bit of sweetness. I also reduced the AP flour a bit and added a couple tablespoons of flaxseed meal to up the nutrition just a little more and sprinkled chopped pecans on them while cooking for extra texture. They browned up beautifully, got perfectly fluffy and tasted great. I will definitely be making them again!!

OMG!!! The BEST!!!! I used them as waffles and they came out PERFECTLY!!! Diced the apple pretty small, added cinnamon and vanilla, used pure maple syrup (5TBSP, unsweetened almond milk which is only 40 calories a cup (!! and the rest buttermilk. Also used mostly whole wheat flour with a few TBSP AP flour and still....perfection!!! Didn't need butter at all. No sticking, perfect browning. Not one left!!!

My husband and I made these this morning and we were amazed that such a healthy recipe could result in such a fluffy, light, and delicious tasting pancake! We used white whole wheat flour instead of the whole wheat pastry flour and made thin-sliced chunks of a Jonathan apple. Halfway through, I pulled up the reviews and we decided to add ground 1/2 tsp of Apple Pie Spice to the last half of the batter. WOH! It was a delicoius addition and really made the pancakes taste even better! This is our new regular pancake batter!!

I made some tweaks to the recipe- probably took the health factor out but they're pancakes, right?
I didn't have whole wheat flour so I used all-purpose flour. I added a teaspoon of vanilla and a sprinkling of cinnamon (from Lee's recommendation. This made them sweet and more like a light apple pie flavoring.
Also I made a minor adjustment to the apples. I thinly sliced them because I wanted them to be pretty in the pancakes- like a spiral design. That didn't work when I cooked them. However, I liked that there was a thin layer of apple in every bite instead of the chunks.

I made these pancakes for Thanksgiving breakfast, and they were a big hit with my family. In the future, I think I would add a bit of vanilla extract (perhaps 1 tsp., and maybe some ground cinnamon to give them a little more flavor. I may also try grating the apple into the mix, rather than adding diced pieces, to increase the moisture - the whole wheat flour can be a little dry. Overall, a good healthy pancake recipe!

My husband and I just made these pancakes for breakfast and they were delicious. Instead of sprinkling on the apples, we stirred them into the batter, making sure to leave out any water that had accumulated in the bowl. Also, we think cinnamon might be a nice touch. Very easy to make and very good pancakes.
