I've been looking for a recipie for wheat pancakes that makes them fluffy AND moist to no avail... These are absolutely perfect. I didn't make the topping as I'm serving these to my 3 boys (all under 5 btw and they loved them. I added a 6 ounce jar of sweet potato baby food for the second batch just to get a little more vitamin A and they still came out fluffy and light! Thanks Ellie!!!

Excellent recipe. The first time I made it exactly as the recipe called for, but the next few times I added more salt and changed the fruit. It's that time of year after all! My husband's favorite alternates between blueberries or raspberries. My favorite is banana. Try it.

I AM SO NOT KIDDING...THESE PANCAKES TASTE LIKE DOUGHNUTS!!! I don't know how Ellie manages to consistently create the most wonderful and creative recipes in such a healthy way! It is so comforting to cook her food, because it is so good that it feels like your body is thanking you afterward! The sweetness of the nutty topping combines with the luscious and soft pancakes and the result is just AWESOME!

Had these for breakfast. They were light, fluffy and the topping oh so nutty! I used agave sweetener instead of honey and added cinnamon and nutmeg to the apples. So yummy!

I made these this morning and they were very good. I like my food sweet so I added a little extra honey and I didn't have buttermilk so I used reg milk and they were still very good. I also did not make the topping. I cooked apples on the stove in a little brown sugar, nutmeg and cinnamon and topped my pancakes with that. No need for syrup! In fact, the pancakes were almost good enough to eat plain. Very nice....

I don't think i'll ever miss boxed pancake mix after eating these. I used two egg whites instead of the whole eggs. Sorry Ellie i'm on a low fat diet.

I just make these pancakes for brunch and mu husband said that it was the best pancake he ever ate. I think is nice and flufy. The apple gives a nice touch and the crunck of the nuts are delicious. By the way, I also added walnuts and flex seeds. I definitely recommend.

I watched Ellie's episode that featured these pancakes a couple of weeks ago and I have been thinking about them ever since. I got up this Saturday morning and drove to the store to get a couple of the ingredients I didn't already have in the pantry and came back home and made them.
This is definitely a recipe I'll make again. A good "company" recipe for when you have house guests.
    Thanks, Ellie!

Didn't have the ingredients for the topping but made the pancakes and they were a HIT with everyone including my 7 year old!
Next time I'll try with other fruit - thanks Ellie!
