Use the whole wheat pastry flour as suggested. These are amazingly light and fluffy for "whole wheat" pancakes. Next time I will use more apple. Also, I watched the amount of lowfat milk I added after the buttermilk. For some reason, my batter started to become runny after about the first batch was cooking. Glad I did. Otherwise, great recipe and will make again.

I like berries in my pancakes and i didn't have any apples, only a freezer full of berries, so I choose blackberries. This was such a simple and satisfying recipe. I don't know how many calories are usually in pancakes but from my calculations, a 1/3 cup of batter with blackberries was only 88 calories; that's a winner in my book (considering that whole wheat fills you up faster and longer so you eat less. I will be making this often as well as other Ellie Krieger recipes!

Mmm, these are so so good. We love adding whole wheat to our pancakes, but this recipe is delicious. It's so light and fluffy. Usually whole wheat makes a pancake heavy. This recipe doesn't. It's perfect. I'm going to make some more this morning.

My boys AND my husband loved these. They really tasted like regular pancakes-the whole wheat didn't make any difference in taste. We just had the pancakes, not the apples and not the topping. You will not just like them but you will keep this recipe to use again and again. Healthier too!

I made these Pancakes today (01/18/09, I did not make the toppings, i thought that was just too over the top for me. I added 4 teaspoons of Honey instead of the 2 teaspoon, and i added fresh grated Nutmeg to the mixer. The recipe produce me Fourteen (14 Pancakes. Something was truly missing from the recipe, can't put my hands on it, but, overall it tasted good. This is a keeper.

I made these two nights ago for dinner. I followed the recipe except left off the nutty topping (my kids would not eat that. They loved the pancakes! I found them to be very filling and great tasting. I also was very happy to have another way to get fiber in my 3 year old's diet - he has a constipation problem. We will definitely make this again.

My daughter saw Ellie make these pancakes on TV yesterday, and sent me to the store that same afternoon to get the ingredients we didn't have on hand already. I'm not usually one for pancakes because they typically sit in your stomach for hours like a brick, but they sounded good, so I agreed. We made the pancakes the next morning, and they were LIGHT and FLUFFY -- and GOOD FOR YOUR TOO! My daughter liked the flavor with the apples in the pancakes, and anything that gets a 5 year old to eat whole wheat and apple peels is a good thing in my book. The nutty topping was great too. It had a nice full flavor and didn't feel like you were getting cheated on anything by being healthy. Even my "meat-a-tarian" husband loved this recipe, including the nutty topping (which I thought he'd find it too "nuts-and-twigs-ish. Plus, these were super easy to make. My only problem was that I kept trying to turn them over before they were ready, so some of the first batch turned out a little lopsided. We will definitely be making these pancakes again soon, probably with a dash of cinnamon...
