    Seriously good chicken pot pie! We often use a lot less chicken, amp up the peas, and major phyllo. I also have to add more salt...but usually a good sprinkle of kosher salt on top will do it. I can't get enough of this stuff. So good. Thanks, Ellie!

    Ive made this one a few times and it always comes out delicious! I throw in my own mix of veggies which usually includes celery, carrots, green beans & frozen peas. I also use puff pastry, its worth the extra calories! As far as seasoning goes, make sure you taste as you go and add as you need it.

    This recipe is really great. I made a few of adjustments. I added carrots and used onion instead, only used about 1 tsp fresh thyme. I also reduced the milk by 1/2 cup. I also seasoned the chicken and the veggies as they cooked. I also used pie crust instead. Also taste as you go and adjust to your taste. Me and my boyfriend loved it. The leftovers were just as good.

    Like other reviewers, I used onion instead of leeks and I added carrots. The carrots really added a lot, especially color since all the other veggies are green. I made it in my dutch oven and rolled a sheet of puff pastry out and put it on top of the whole thing. I used dry herbs (1 tsp parsley and 2 tsp thyme. It came out beautiful and so tasty! My husband loved it...I'll definitely be making this again. Hopefully I'll be able to find individual dishes this fall/winter. I also think I'll bake the puff pastry separate and then add it on top so it has a nicer crunch and isn't so gooey and messy looking. I'm excited to make this for friends.

    Totally hit the spot. Glad i read the reviews before making, needed the extra seasoning (we added the thyme with the stock to get the flavor out of it better.

    This was incredibly easy and very delicious. I made a few tweaks based on the comments from others:
    I can see how this could be a bit bland - so I added more spices. Add whatever your preference. I really like thyme, so I added a bit extra.
    To make it creamier, I dissolved some cornstarch in water and added it after the milk and chicken broth, and it was thick and gooey and everything a chicken pot pie should be.
    I added 3 layers of phyllo on top of each to get a little extra crunch (with olive oil between each layer
    I couldn't really taste the parm at all, so I think I'm going to leave it out; no need to have the extra calories if you can't really taste it, and it really doesn't need the extra flavor.

    I make these at least once a month - the only substitutions I make are to add more fresh veggies (carrots, onion, and I use puffed pastry instead of phyllo dough. It adds a few more calories, but totally worth it. :

    I made this recipe and I thought that it was good, far from the best chicken pot pie I have ever had. However, after reading the other posts I wanted to remind everyone that this chicken pot pie is far more healthier than most. Which maybe could explain the "lack of flavor." I made an egg wash and brushed the top. It made a beautiful crust, one step that Ellie Krieger cut out.

    I followed teh recipe exactly. It was straight forward but the end result lacked flavor. I love chicken pot pie but I think I will try another recipe next time.
