My favorite part of this was the phyllo topping with the parmesan cheese grated on top. The filling was a different story. I loved all the veggies, but it was just kind of a watery, flavorless mess. This recipe also makes way more than four servings, IMHO. It's not a lost cause though. I think it could be good with some tweaking.

I just made this recipe and it turned out well, but the veggies needed more than double the cooking time than stated in the recipe. The potatoes initially came out crunchy - so I had to cook the pie an additional 15 minutes. I also found it a bit bland and doubled the thyme - make sure you use fresh because the dried stuff doesn't taste nearly as good.

I have made this dish now about ten times and every time it turns out perfect. I have also shared it with my friends and family, who also think that it is wonderful. It's so great that I can get it all ready, put the dishes in the oven and clean up all of the dishes before they're done baking. By the time my family and I sit down for dinner, there's nothing to do except enjoy each others company and a healthy meal. I do, however put only about half of the thyme in it. I usually don't use all of the seasonings that a recipe calls for.

I thought that this recipe was really good. I wished I would have taken the advice from the other reviewers about the thyme. It is a little overpowering. Next time, I will add half of the amount. I did take the advice from the other reviewers by, substituting onions for leeks, adding carrots, using three sheets of phyllo dough and brushing it with butter. This recipe does take sometime to make (due to the chopping but it is rated at "medium" for difficulty, which I feel is accurate. I will definitely make this again! Enjoy!

I made it for my family and it was gross. There was way too much thyme. It is no where close to a traditional chicken pot pie. I found it very disappointing...

The thyme was overpowering. While it was easier to make than I thought it was not good at all. Both my husband and I didn't like it one bit.

I recently made this recipe for my husband and I as our anniversary dinner. I made it in a larger casserole dish instead of individual bowls. We both loved it, but I made a few changes: 1 I substituted part of the chicken stock for Chardonnay, 2I didn't have green beans, so I used asparagus cut into pieces, 3I added carrots, and 4 I seasoned the chicken pretty liberally with Adobo ( a Goya product that is essentially a blend of salt, pepper and garlic powder. It was really good. Oh, I used a frozen pie crust to top the pot pie because I didn't buy phyllo.

I would say this recipe is pretty good, but it would be great if it could be simplified. It felt like a lot of work and was simply okay. I also felt the dish was quite runny and not entirely flavorful. I'm very glad I brushed my phyllo with butter instead of olive oil, because that helped a lot, though I'm sure added a few calories. Nothing special here.

As a rule, my stepfather and stepbrother will refuse a plate of "healthy" food without even trying it. They ate this chicken pot pie and asked if I would make it again!

I didn't have individual backing dishes, so I followed the recipe but used a 9x9 backing dish. My boyfriend went back for seconds and took some with him to work for lunch the next day! It's like a gourmet version of a chicken pot pie. I went out and bought the individual dishes the next day. I would highly recommend this recipe, and I will definitely make it again!
