I love lasagna, and it's the first thing I look for on the menu at an Italian restaurant. I made this at home, and did a few minor changes to the recipe. I used fresh lasagna noodles (from the fresh pasta section of the store, and takes about 20 min less to cok, only did three layers, and added spinach to the ricotta mixture. Wonderful, and not too heavy for lasagna. Great great flavors, and the sauce is delicious with a little kick. Highly recommended, and this is a new favorite for me and my husband. He agreed, it was better even than any lasagna we've had out.

Easiest lasagna I have ever made. Not cooking the noodles ahead of time made them firmer than other receipes I have tried. Everyone loved it. Thanks Emeril.
