    I made this for a luncheon at work, I doubled the recipe so there was a fairly generous amount to share. They ate it all, scraping the crock pot clean ... it was fantastic! I did add some cream of coconut to make it a little more creamy/sweet, I also added some sesame oil. I was pleased that the peanuts in the peanut butter didn't soften but stayed crunchy, it enhanced the texture a lot.

    This is probably now our favorite dinner. It is such a nice change from the "Thanksgiving" tastes, yet it's a great use of leftover turkey. I added about 1/3 cup of brown sugar and served it over brown rice. Crazy good!

    this was the best!!! Emeril is the MAN! This is a filling hearty tasteful stew that husbands children and random house guests will love. I got it right in one shot because its so easy!! try it and then make it for friends and everyone will think you are SO COOL!

    I made this soup last night and it was a big hit. The combination of spicy cayenne, sweet peanut putter, and earthy curry is a knock out. Thank you Emeril for a quick and easy soup. I can't wait to try the leftovers on top of rice for lunch tomorrow.

    My husband says he wants this once a week- at least once a month. It was easy to make (make sure you have everything that you need ready ahead of time, it goes quickly. Wonderful, hearty, healthy!

    When I saw this recipe I immediately saved it in my recipe box. Unlike my family, I was not a skeptic. I actually had this soup from an African co-worker in New York City. They never gave me the recipe, but I tried to do my version of it. However Emeril's recipe really captured the authenticity of the soup I tasted. I used ground chicken instead of turkey, but next time I'm gonna use chicken wings (actually when I first had this soup it was with beef.

    I needed to make a dish for an African themed potluck. I tested it out on a neighbor and she 2nd my thumbs up. Everyone who tried it at the potluck was in awe. I was asked several times for the recipe. (a diabetic said it was a perfect dish for her I made it he night before. The next morning I added a splash of cocnut milk and chicken broth to loosen it up because it had thinked. I believe it tasted better because the flavors had melded.

    this soup is my idea of comfort food. i embellished the recipe (creamy penut butter, more coconut milk and a few whole hot peppers and might try gound pork next time. you would think it might be overly rich considering the ingrediants but the spices keep it in balance. Enjoy!
