This soup is nourishing and delicious - we were feeling adventurous and gave it a try and are glad we did! The ground turkey adds a nice heartiness but could possibly be omitted for a vegitarian option.

This is a great, easy soup to make for a chilly evening. I add a bit more coconut milk than the recipe calls for. For a bit more zip, try adding lime juice to taste!

    Tasted really good.
However, I think it was missing something, perhaps ginger.
Left overs got really thick and I ate it over rice or thick rice noodles.

I love this soup. This is one of those amazing recipes that I just can't believe that I cooked something this good! It's SOOOO yummy. I like it better with creamy peanut butter, and I like to serve it over rice.

I made a few changes to this recipe to make it vegetarian. I used veg, broth and left the turkey out. No problem. I used almond butter b/c that is what I had in the pantry - also no problem. One last modification was that I pureed the whole thing. Our local food co-op serves pureed African peanut soup so that is what is familiar to me and I was trying to recreate it. Delicious and easy!

Seems high in fat, but tasted good.

This is a very hearty soup with many flavors and aromas. It is awesome. I actually increased the amount of coconut milk in this recipe, otherwise I think the coconut flavor may have gone unnoticed.
