    Absolutely amazing. Without a doubt the best Cornish Hens we have ever had. Also very pretty. Served with steamed green beans and sauté onion and fennel mixture. Great meal.

    Rice pilaf was awesome! My husband doesn't care for sweet with his savory - so next time I'll make some without the raisins.. Thank you Emeril!

    I've made this a couple of times now. The first time was at camp using dutch ovens - I followed the recipe exactly as written and the hens turned out perfect. I made 6 hens using a 12" DO 24 coals 1:1 top to bottom. I turned around made this for two the other day at home. I forgot to buy OJ, but I did have Grand Marnier... Talk about WOW... the glaze reduced a bit faster, and wasn't as sweet - definately added a touch of sophistication! Both times the hens turned out juicy and suculent, and the rice stuffing was the perfect accompaniment...YUM!

    Lots of flavor and impressive. I also made the rice pilaf the day before, and on the stove, to cut down the prep time the day I was serving it. The baking time was perfect although I had set the hens out approx. 1 hr. ahead to get to room temp. The only "glitch" I ran into was that it took a lot longer than 8-10 minutes to reduce the glaze but then I was making 1 1/2 X the recipe (6 hens. I just kept cooking it even after applying the first coating. The recipe makes plenty of rice and glaze.

    Warning this recipe does not take 2 hours. Its more like a three and half hour recipe. By the end I was so frustrated I didn't even want to eat it

    My wife and I made this last year and it was so fantastic (especially the rice that we are making it again this week for my visiting family. I plan to make the rice ahead of time to limit the prep time while we're all catching up. Emeril is awesome!

    The stuffing is amazing my kids were raving about how good dinner was. Also it's a super easy recipe that's looks great and tastes amazing.
