    I love this dish! I was concerned that it might be too rich for my teens, but with the sweetness the balance was perfect. I was able to prepare the rice in advance and that made it easier to create on a busy schedule. I am looking for a substitute for the standard Thanksgiving turkey and I think I may have found it here!

    I own a small gourmet sandwich shop called Melina's in the Village in Onset, MA. On Thursday nights I offer a take-out dinner entree which people reserve a dinner. I offered this recipe served with roasted brussel sprouts and cheese cake for dessert; I was somewhat taken aback when I had 30 hens in my small kitchen and having 29 dinners to prepare (along with daily sandwiches. However my helper and I expanded the recipe to accomdate the 29 dinners, We did not stuff the birds but served the rice (hearty portion behind the bird. Some of the birds glazed blacked a bit in the convection oven but the presentation was still very nice and our customers made a point of coming in or calling to express how thrilled they were with the dinner and signed up for next weeks entree ... they do not know what we are making yet!!!!!

    We made this for Christmas Eve and it was very good, especially the rice pilaf. Used hot Italian sausage and substituted dried cranberries for the raisins. Made the rice and glaze ahead of time, then just stuffed the hens and baked as directed. Simple.

    We loved it, but we are not big Thyme fans, so when we do it the next time, we will cut the amout of Thyme back to 1 t. We also added 1/3 C. of dried cranberries to the Pilaf. A very good addition.

    I made this for Thanksgiving this year. It is very easy and incredibly flavorful. I would keep this recipe for the rice pilaf if nothing else. This recipe is impressive and definitely a good trick to have up your sleeve for when you have dinner guests!

    This was absolutely delicious and easy to make. I doubled the recipe
    for Thanksgivng so the process was longer but sill very easy. I added extra seasoning to the hens with a little poultry and creole seasoning. I am still getting raves about how good the hens and rice came out. Also, the presentation with how golden the hens get, was just lovely. I will absolutely try this again...its a winner

    I found the hens to be very bland. I cooked them in a countertop roaster and although they were cooked they never crisped. I followed the recipe exactly and while the rice was very good (Husband loved it, we both agreed that the hen didn't really have much flavor. I have one hen left that I am going to try cooking in the oven today and see if it comes out any different. Just didn't see what everyone was raving about....
