If you haven't figured this out, Emeril has two different versions of this dip on the site, and some of the reviews posted here are reviews of the other one (with brie and bacon, and what wouldn't be 5-star with those ingredients? My review is for this one.

This is good, it's not hard (I'm not sure if some of those reviewers who said it was hard were using the other recipe?, and what I like about it is that there isn't a ton of cheese in it -- this makes it more economical and healthier.

I was counting on this recipe to make me a star. I made this exactly as recipe states and it was awful. I've made Emeril recipes before and they've been great. This was a bomb at my work party. Lacked some sort of flavor...all that work for nothing.

Emeril goes overboard once again. I have had many artichoke and spinach dips, but this one is, well, as Emeril says "Bam!". I think what made it different was the heavy cream and the cup of brie, just gave it that different flavor.

Don't be fooled by other recipes using cream cheese and other shortcuts. This tastes like artichoke and spinach dip should taste. Add a bit of red pepper to give it a little kick.

I have made this dip a bunch of times. Everywhere I take it everyone raves about it. It may take a few min longer than some other recipes but it is def. worth it. I do however only use 1 can of artichokes and about half an onion. Also great with pita chips

I LOVED THIS DIP. I SERVED IT AT A BBQ FOR ALL MY FRIENDS AND I RECIEVED SO MANY COMLIMENTS. THE WHOLE DISH WAS GONE BY THE END OF THE NIGHT. I SERVED THIS DIP WITH BRUSCHETTA BREAD INSTEAD OF CHIPS. IT WAS AMAZING!! I COULD SEE HOW SOME PEOPLE COULD SAY IT'S WAS SLIMEY THOUGH. IT SAYS TO FOLD NOT STIR WHEN ADDING TOGETHER THE VEGIS AND THE CHEESE SAUCE. IF OVER MIXED THEN IT BECOMES SLIMY SO JUST BE CAREFUL WHEN MIXING. FOLD NOT STIR. THIS DIP WAS FAR FROM SLIMY. IT WAS ARTICHOKY AND YUMMY!!! IF YOU LOVE ARTICHOKES, THEN YOU WILL LOVE THIS RECIPE

MADE THIS FOR EASTER AS AN APPY-EVERYONE RAVED AND FINISHED IT. I DIDN'T THINK IT WAS SALTY AT ALL OR ARTICHOKY. GREAT BLEND OF FLAVORS.

This is my go-to spinach dip recipe. I usually buy 2 bunches of fresh spinach, cut the stems off, chop, rinse well, and wilt down in batches. I squeeze out the water and then use when ready. One can of artichokes is enough plus it cuts the cost down several dollars. I also use an Italian blend of cheese and find that it melts well and provides good flavor. I have made this dip more than 5 times now and everyone that tries it loves it.
