Ingredients

  • 1 pound long green beans, trimmed, cooked, and cooled
  • 1 teaspoon crushed red pepper flakes
  • 2 tablespoons rice vinegar
  • 1 teaspoon chopped garlic
  • 1/4 cup olive oil
  • 2 tablespoons sesame oil
  • 2 cups cherry tomatoes, halved
  • 2 tablespoons crushed toasted peanuts
  • Salt and pepper

Directions

In a bowl toss all ingredients together. Season to taste with salt and pepper. Serve at room temperature.

    Long Beans are Special

    Long beans do not taste like other green beans, they are more substancial in flavor and texture. I used less oil and more... garlic per taste preference. Often I need to accomodate nut allergies so I leave out the sesame oil and peanuts and add a bit of ginger juice (grated fresh ginger with the solids squeezed out). This is a beautiful, delicious and healthy recipe. Everyone I've introduced to long beans has loved them.Read more
