    My family loves long beans & Emeril..together? A winning combo! I did make two changes. Cut the red peppper flakes in half due to my 9 yr old's tastebuds & added more garlic because the clove I chopped was bigger than 1 tsp. It's awesome!

    A great way to eat your veggies! Great dressing combo! To make it more ornate, I cut the green beans in half, lengthwise. In addition, I used chopped raw almonds and roasted the tomatoes with olive oil, salt and pepper.

    Long beans do not taste like other green beans, they are more substancial in flavor and texture. I used less oil and more garlic per taste preference. Often I need to accomodate nut allergies so I leave out the sesame oil and peanuts and add a bit of ginger juice (grated fresh ginger with the solids squeezed out. This is a beautiful, delicious and healthy recipe. Everyone I've introduced to long beans has loved them.
