Directions

Seal Bay cheese ? a rich, creamy triple cream cheese made from fresh King Island milk and enriched with pure cream. The cheese is enveloped by a bloom of white mold which continues to develop during maturation, adding to the flavor of the cheese. It has a rich golden center with a buttery, slightly nutty flavor. Wine Pairing: Buckley's Semillon Chardonnay

Lighthouse Blue Brie ? A delicately distinctive cheese with textured white mold and a rich, creamy center. The mold gradually matures developing a more piquant flavor with age. Wine Pairing: Ninth Island Pinot Noir

Roaring Forties ? A full flavored blue with a sweet, nutty character and good aftertaste. The cheese is matured in wax thus retaining its moisture and creating a smooth and creamy texture. A unique and exciting cheese style. Wine Pairing: Heggies Eden Valley Botrytis Riesling

Stormy ? A traditional washed rind cheese with a wild aroma and a surprisingly soft and mild interior with a subtle flavor that develops with age. Wine Pairing: Owen's Estate Shiraz
