This recipe was a wonderful light alternative to hoppin john for our New Year's day meal. It was easy to make but the ingredients made it seem very gourmet! The walnut oil was pricey but I splurged and it was worth it.

The perfect meld of all flavors. I didnt use walnut oil as I forgot to buy it but it was great with a high quality olive oil. Will make again, thank you!

The different flavors and textures are just perfect together. I have already made this salad twice and am planning on making it again this week. The first time I made it, I made it exactly as the recipe states. The next time, I didn't have enough arugula and so I mixed about 50/50 with baby spinach. It was still wonderful. These flavors really work well together.

I LOVE this salad. The flavors all work together beautifully and its super fast and easy to make. I find that salads at home never quite make the cut but this one is a different story! I've made it several times, and once substituting spinach for the arugula. The dressing is light and sweet and YUMMY!
