    This was my first Thanksgiving turkey I've ever made and WOW! Very easy.....and although I'm very thankful for all the turkeys that have been cooked for me before, this was better than all of them!

    Excellent. I brined the breast and omitted the salt in the butter paste. Don't even think about not doing the bacon-fat baste: c'mon...it's only one day a year and doing so provided such a wonderful and crispy skin! My picky teenager loved it! Two 80+ autnies had second helpings. This will become a turkey-day staple in our house.

    I saw this recipe and thought I'd give it a try. This basting made the turkey breast so moist and delicious that I used it again 2 days later on another breast. I just emailed this recipe to my brother to see if he wants to try it on our Thanksgiving dinner. (He is a big Emeril follower. The flavor was outstanding and the leftovers tasted just as good as it was fresh out of the oven.

    this was a wonderful recipe. I didn't have any thick cut bacon so i just used 4 slices of regular bacon. This was so good. the only reason i gave it 4 stars instead of 5 was because i thought it was too salty. I'll make it again for sure but cut back on the salt. thanks Emeril!

    We used this recipe last Thanksgiving and everyone wanted the recipe. The turkey was very moist, full of flavor, and by far the best turkey we have ever had.
    We are most definitely using this same recipe again this Thanksgiving.
