I saw this recipe on the Emeril show last November and decided to try it out on the family for Thanksgiving. What a huge hit. It was so easy and so very delicious. What a great way to get everyone to eat their brussel sprouts. And the aroma was intoxicating. Thanks Emeril!

Aww man! I think I like brussels sprouts, but I'm still working on finding a recipe! This was the first time I cooked them, and they got a little browned- oops! At least they weren't mushy. You have to watch them!
Also, I used red onion since that's what I had! Maybe that wasn't the best...
I don't think I will make it again because I really don't need an excuse to put bacon grease all over a vegetable. Why not just have a BLT!?! ;

I LOVE this recipe. I love being able to buy brussel sprouts and say I am making them to everyone's chagrin. This recipe will make the most picky eater love this veggie.

Like a lot of people, I never liked Brussel Sprouts. However, since I love and trust Emeril, I tried it. The only thing that I did differently is that I added 2 small bags of dried cranberries when everything else was into the dish and cooked the sprouts for the last 10 to 12 minutes. Took it to my church for our pre-Thanksgiving dinner. By the time the 3rd table was called to the buffet, my huge dish of sprouts (I cooked 3lbs of sprouts was gone. Everyone came up to me asking for the recipe. The people who did not get a chance to get a helping, heard how good they were and I've e-mailed this to several people when I got home this afternoon. The dried cranberries made it look so festive and complimented the bacon. HOORAY and thank you Emeril. You can always be depended upon and I will try many more of your recipes!!

Growing up, I hated brussel sprouts and never thought that I would eat them. I have a friend that loves them and I had him over for dinner and thought it would be nice to make these for him. I could not believe it. They were great. I chalk it up to the bacon! The only thing I changed about the recipe it while it was sitting in the pan for the last 12-15 minutes, I added a few tablespoons of butter to give it a liquid in the pan. Leave it to bacon and butter to make me like a vegetable!

This is definitely our favorite way to prepare brussel sprouts. I don't remove everything from the pan and it turns out fine. Made them last night with beef tenderloin/ mushroom ragout. Absolutely perfect!

I always find brussels sprouts to be a little uncomfortably bitter -- but this dish was nothing short of superb. Tender with just the right balance between healthy and devilishly naughty (how can you go wrong with bacon as your ally?.
I personally like to parboil the brussels sprouts beforehand to avoid burning them, but that's just me.

Until my 16 yr. old nephew called me ....I had forgotten about making these last year for Thanksgiving. We always ask everyone what thay want "special "for the "big meal". He said to please make a lot more of the brussel sprouts! I now remember doubling the recipe last year, and washing an empty bowl......guess I'll need to triple it this year!! Everyone loves these.
