I made this and it was absolutely delicious. It was very easy to prepare, and I had all of my veggies cut up and ready to go when my guests arrived for dinner, so that I could cook with ease while we mingled in the kitchen.
Neither the first nor the bacon were done after searing and then baking for 8 minutes, but I had very thick fillets (but regular bacon. I put it back in the oven for 8 more minutes and it was absolutely perfect.
I will definitely be making this dish again, but I won't add any salt to the Essence or do any seasoning with it in the skillet. My only criticism of this recipe is that it is WAY too salty with the olives, chicken stock, AND added salt.

Dish was good. Used Halibut instead...hard to find roc cod here. Cooked bacon till translucent first then wrapped around Halibut...cooked for 2-3 minutes each side. Came out very moist and flavorful. Very salty with the bacon and green/black olives. Added red bell peppers also.
