I would drink that sauce. You can put that sauce on anything and you would eat it. Delicious! I ditched the bacon by the way, which is normally like sacrilege in my house, but that bacon flavor is not necessary, let that sauce speak for itself.

Caught some nice Rainbow trouties up at Deer Creek a couple of days ago (UT and wanted to try a different recipe. So glad I did. This was very simple, very gourmie and super tasty. I have one portion left and am anticipating a yummy left-over lunch today. Toasted some nice hearty bread under the broiler which was perfect. Nice texture contrast and great for sopping up the tasty juices. I did a simple ratatouille as a side dish, which was good, but I don't think I'll pair that up again...too many things happening on the plate. Maybe some simple dilled carrots or squash. Note: be sure to toothpick the bacon around the fish as instructed. I thought I wouldn't need to, but the broiler made it curl, so when I turned it over, I quickly added the toothpicks.
