    The pasta was good, but what I liked the most is what for an emeril recipe, it was pretty simple. My pasta was slightly acid (I used store brought sauce but the squash was sweet - it ended being a perfect balance for me.

    This is one of the best meals I have ever made! It looks beautiful and tasts amazing! I split two acorn squash's for two of us and it was more than enough. We couldn't finish it all. This one is going in the books! It's also very easy.

    I made this and it was wonderful. I made a couple of changes:
    Fist, I think a smaller pasta works better and fills the cavity better.
    Second, I took the seeds and stuff and sauteed them in olive oil and then added chicken stock. I let the stock and seeds cook until stock was about half. I then put the mixture in the blender for about a minute on high. I strained the liquid and used it as the chicken broth in the original recipe.

    This is a great recipe for a party because one can make the sauce a day ahead and then just do the squash and noodles on the day of the party.

    My family of five boys and I had this type of dish in Italy and ever since I found Emerile's recipe we have eaten great "memories"....It is a great way to get the family to eat healthy squash and besides, boys LOVE to dig; the squash "bowl" works great!
