Ingredients

  • 1/2 cup solid vegetable shortening
  • 1 cup sugar
  • 2 eggs
  • 3/4 cup mashed ripe bananas
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups flour
  • 1/2 cup macadamia nuts
  • Pinch of cinnamon

Directions

Preheat the oven to 350 degrees.

Oil and flour a 9x5x3-inch loaf pan.

Using an electric mixer, cream the shortening and sugar. With the mixer running on medium speed, add the eggs one at a time. Add the bananas and mix well. Add the baking soda, salt, flour, nuts and cinnamon and mix thoroughly. The dough will be sticky.

Pour the dough into the prepared pan and bake about one hour or until the center is brown and set.

    I read the reviews before making this recipe and tried it as printed and then added some variations of my own. FABULOUS!... Instead of plain shortening I used the butter flavored version which added a nice richness to the recipe. I also added 1 chopped banana at the end to add some texture. I used a teaspoon of vanilla extract and it came out so moist and flavorful!! Great recipe!!Read more

    Very easy to make and very delicious. After the first time I made it i found that the banana flavor wasn't enough for me, but... I'm a banana freak. That is what is good about this recipe though, you can change it a little to suit you. Say you like yours a little more nutty, just add some nuts. I would stick to the recipe for the most part though. Enjoy!Read more

    I loved how easy it was to throw all the ingrediants together, toss in the oven and forget about it. I needed to bake a bit... longer than the reciepe called for but then again my oven is a little outdated... Came out moist and delicious with a creamy butter spread and a cup of coffee. I tend to like very sweet and would have liked more punch to the banana flavor, but will do it again and just add a little more. It's a must for you weekly banana buyers that always seem to throw the last few away by weeks end. Awesome!Read more

    I could not find my recipe so I used this one and it is very easy, I used 3 large bananas and waluts and added Vanilla and a... splash of almond extract, It was very good and very moist, but I did bake it in two loaf pans and for only 40 minutes. This is a great recipe, try it you will love it.Read more

    The flavor is great! I followed some of the suggestions using applesauce. It was almost too moist. I also added 3 bananas,... blended it into the batter then added one more only diced and folded it in.(might have led to the over moist issue) BUT, fantastic flavor. Thanks for all the tips!Read more
