Ingredients

  • 1/2 cup solid vegetable shortening
  • 1 cup sugar
  • 2 eggs
  • 3/4 cup mashed ripe bananas
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups flour
  • 1/2 cup macadamia nuts
  • Pinch of cinnamon

Directions

Preheat the oven to 350 degrees.

Oil and flour a 9x5x3-inch loaf pan.

Using an electric mixer, cream the shortening and sugar. With the mixer running on medium speed, add the eggs one at a time. Add the bananas and mix well. Add the baking soda, salt, flour, nuts and cinnamon and mix thoroughly. The dough will be sticky.

Pour the dough into the prepared pan and bake about one hour or until the center is brown and set.

    This is the answer to a great inexpensive from scratch holiday/and or hostess gift!

    So easy, the loaf looks beautiful and its moist! I imagine bringing to work as gifts for my co-workers and higher ups each... wrapped with cellophane and a bow--done! I read below and found that everyone agreed to add more ripe banana--so I used 2 whole ones instead of 3/4 of one. Also added a smashed frozen 1/2 bar of dark hershey's chocolate so it has jagged bits of dark choc throughout. Also used finely chopped walnuts coated in cinnamon and brown sugar in the batter and a top layer of it with extra brown sugar. I used fresh baking powder and the loaf rose beautifully high in the middle unlike what some comments below had issue with.Read more

    This is a great recipe, however I made some modifications. I subbed 1/4 cup applesauce for a 1/4 cup of the shortening -... healthier. Subbed half the sugar with brown sugar. Used more banana. Used a teaspoon cinnamon and a 1/2 teaspoon each of nutmeg, allspice and ginger. Added a 1/2 teaspoon baking powder. Added a teaspoon vanilla extract. Added 1/4 cup crushed pineapple for added moisture. I also used walnuts instead of macadamia nuts. I baked in a loaf pan for 50 minutes. Mmmm good!Read more

    I have made this recipe several times since I found it online. I may tweek it a little with an extra banana or some vanilla... extract, etc. I just made some yesterday and the whole loaf is almost gone! Even my 2 year old eats it! It is always a winner at my house!Read more

    I made it a couple times exactly as the recipes said. It is EXTREMELY easy but mine came out a little weak on the banana... flavor I'm accustomed to in banana bread. I'm always looking for ways to improve a recipe. My wife didn't like the idea of using shortening so I looked at other recipes for an alternative. One of Emeril's other BB recipes uses butter so I used 10 tbl unsalted butter and upped the flour to 1 1/2 cups. I used organic whole wheat flour because we're trying to use healthier ingredients. Instead of measuring the bananas, I just put in 3 good sized ones that would have been bad in another day. I just tossed them into the batter and mixed it up. I used pecans because I love pecans. One thing that I think really helped was the addition of 1 tsp vanilla extract. Vanilla is a flavor enhancer. The result was AMAZING. Excelent banana flavor and very moist.Read more
