Taste was great but not very visually appealing. I wish I would have read reviews. I had to leave in oven for full hour to get center to set but by then the crust was very dark and the darkness ran through 3/4 of the bread. When slices only 1/4 in center was light in color. I read reviews and tried tenting with foil and turning down temp. Prefer Emeril's other Banana Bread Recipe using Sour Cream. ( I was out of sour cream.

This is an awesome recipe. I have made this many times. I did add more bananas and I also had to adjust the cooking time because the first time I made it the outside got too hard and couldn't eat it. I just cooked it for 30 min at 300 degrees covered with aluminum foil than took that off and cooked it for another 30 minutes with the foil off. It made the outside soft and chewy the way I like it. My kids even eat this and they don't like bananas. I always have to make a few loaves because it goes so fast. It's easy, and something that your kids can help you make.

Excellent. Yes, a bit more banana would not hurt a bit! Moist and delicious though. Keeper recipe.

    Thanks Emeril

I agree with Mystrose...not enough banana flavor...will add more banana next time.
