I use a whole stick of butter instead of shortening, plus add chocolate chips, and vanilla extract. I usually use walnuts because who has macadamias lying around their pantry? Also, I would estimate I use at least 1 cup of banana, sometimes a little more...it makes for the slightest hint of gooeyness towards the center of the loaf, without anything getting dried out from an hour's worth of baking. LOVE this recipe!

This recipe is a WINNER!! I made a couple altercations: I used 1/2 cup regular sugar and 1/2 cup brown sugar, substituted the shortening for real butter, added 1 tsp of vanilla, as well as adding in three slightly over-ripe bananas. The flavor was full and sweet, while the texture was light and soft! I really liked the simplicity of the recipe and the fact that is a pantry recipe! I already had all the ingredients when I decided to make the bread. Definitely going to make this again!!!

I have made this banana bread before. Although this time around I increased the amount of banana I put in and I added half a teaspoon of banana extract and 2 tablespoons of peanut butter. Once I got the mix in the pan and ready to go in the oved I lightly sprinkled the top with some cinnamon-sugar mix. It turned out very good. I have been requested to make it again!

This was my first time making Banana Bread. I added Nutmeg & Vanilla to mine & used 1/2 Brown Sugar & 1/2 Granulated Sugar, & added chocolate chips & applesauce to make it more moist. I beat it by hand using a big spoon since I don't have an electric mixer. When it came out of the oven I drizzled some melted butter on top & let it cool for about a half hour before we ate it! It wad delicious!!

Amazingly good! Very moist, yum! I did add a splash of vanilla and more banana than the recipe called for so that I could use up all of my bananas.
