This recipe was wonderful. It really doesn't deserve a medium difficulty rating, it was very easy to make. I left out the nuts and baked it in a cake pan, and it turned out great. This made a lot of batter and it baked very nicely in a larger pan (I thought my loaf pan just looked to small. It was like a cake the first day and the second day, mellowed into more of a typical banana bread.

Im an amateur at best and don?t do much baking. Under the amount of sugar is said 3/4 and 2 tablespoons, so I put in 2 and 3/4 table spoons. After the bread was done I figure it should have been 3/4 CUPS. O well, Guess I made the low sugar version. Tasted OK. Darn! think it would have been good too!! Hope this helps other amateur bakers

This is the best banana bread I have made or tasted. The sour cream and cake flour is the secret!! This is my standby recipe for extra bananas!

this is quite possibly the best banana bread ever! super moist super delish - it wont last long. i added dried currents for an added twist and probably an extra banana (so little over a cup- the key is the sour cream and the cake flour.

I have tried numerous recipes of banana bread, and this by far, is the BEST I have ever made. Not too light and not too heavy, perfect. The sour cream makes a HUGE difference. Emeril, your a genius!!
