I didn't have corn meal so I used polenta - still good with just a bit of a bite. I take bananas that are on the edge of going bad and through them in the freezer. I chopped the frozen bananas and put 2 in the batter. They melted and gave the banana flavor without the chunks. Made LOTS of pancakes. Great fun recipe.

THis was an easy recipe and very tasty. I love a twist on an old favorite. My kids loved it too!

My family and I loved this recipe. I left out the bananas because I don't like fruit in my pancakes. Easy enough to make, even with beating the egg whites The pancakes were light, which is more difficult with cornmeal pancakes, and yummy. Definitely recommend this recipe.

Wow! These were great! VERY quick and easy. Very attractive! I'm allergic to wheat so I substitute rice flour for wheat flour. This does not always turn out as tasty a product as I would hope. However, in this case, the results were delicious. I was particulary impressed with how light they were and how attractively they browned. These would be great for company.

these were very good. at first i was a little scared because the badder seemed very think but adding the beaten eggwhites right at the end really lightens them up considerably, very good

These were very good, I would make it again, but beating the egg whites separately and then folding was a bit more work than I care for. Good for a special weekend. My kids loved them.

I usually find pancakes heavy and cakey, but these were light and fluffy. At the same time, the cornmeal creates a wonderful cripsy crust on the edges. The bananas add the perfect amount of sweetness w/o needing to add any sugar at all. I would even eat these w/o maple syrup! These are going to become the baseline for many a pancake to come - I can imagine some tasty variations to this, including savory options.
