Delicious! And it was not nearly as intimidating as I thought it would be. I had my boyfriend help me temper the custard and it worked out perfectly. It was super thick and creamy! I didn't even make the whipped cream topping and it was still amazing. I can't wait to make it again!

This is the best thing I ever ate. Not too sweet, so creamy and smooth, and the banana was perfect, there are just no words to describe the taste combination. Ate at Emerils and everything was WONDERFUL, but this was the great Surprise. Wanted to try it after I heard about it on Food Network, but was not expecting the truely fantastic bite. I am so anxious to try this recipe. Thanks Emeril.

Had this when visiting Emeril's NOLA restaurant and it was amazing so I had to try it when I got back....still AMAZING.
Two cups of cream is needed for the whipped cream...you only use two for the custard. After you cook it w/ the crapload of corn starch, it'll turn into a really hard to stir (like workout hard pudding...that's the consistency you want.
I also increased the amount of graham crackers used so I could run it up the side of a 9" springform pan. We liked it better after letting it sit in the fridge for a few days...the bananas get more ripe so there's more taste, and the graham cracker crust gets soggier so it's not as hard.
Did I saw AWESOME? Emeril is the master of cream! :-
BTW, this made wayyyyyyyy too much chocolate and caramel sauce. By "generous", he means a little over a cup. We didn't even use half of it because we did a light drizzle so we could let the banana cream taste come out. I'm cutting the sauce recipes in half next time..

I tried this pie at one of Emeril's restaurants and was blown away! I was so happy when I found the recipe on here. I love the that it's a custard filling. Anyone who has trouble with this recipe must have never made a custard before. And Maria, the other two cups of cream are for the whipped cream portion of the recipe. I've never had a runny custard with this recipe. It always turns out perfect and delicious! This is not a difficult recipe, though I would recommend reading the entire recipe before beginning. Then no one would want to put 4 cups of cream into the custard mixture. LOL

I've made this recipe twice and both times I end up with a very runny custard. Am I doing something wrong? Fortunately I read up online how to safe a runny custard and found that I needed to add more cornstarch (mixed in with milk or water so it's a paste not powder and reheat. This fixed it. I love the taste but the texture needed help.

This pie was awful. I followed the instructions to a T (I always do the first time, and then modify to taste after that. First I'll be honest, I don't really like banana cream pie, but my husband and his family love it. So I made this at Christmas thinking it would be a special treat. After paying $11 for 2 vanilla beans and it being so time consuming, I'm thinking this recipe is going to be AWESOME, and how impressed my in-laws will be and how special they will feel that I made this amazing pie for them.

It literally had no flavor unless you bite into actual banana. I couldn't believe it. Everyone was so disappointed (it looked amazing! It was so bad that they wouldn't even try to eat it to be polite! LOL My relatives all had a good laugh because the only person who would eat it (and he ate a ton of it! was my 2 yo nephew. We threw the rest of it out.

Extremely disappointing. I cook alot of the other chefs on FN (Ina, Bobby F, Neelys, Rachel are among my faves, and their stuff comes out fine. Otherwise I would be willing to take the blame and say it's a user error to account for the fact that this is the 5th or 6th Emeril recipe I have tried and they all turned out terrible . I probably won't waste $ on any more of his stuff.
