If there were six stars, I'd rate this recipe 6 stars. My husband hates cole slaw but this slaw is fantastic on top of the pulled pork sandwiches. We put the pork in a smoker at 225 degrees (using applewood chunks for the heat for 8 hours. OMG...fabulous.
We used Grinder rolls not hamburger buns. We also didn't make the fried pickles-- we just sliced some dill pickles.
Don't omit the mop & BBQ sauce- each sauce takes maybe 5 minutes to make. The cole slaw takes about 15 minutes. The rest of the time required for this recipe is due to the pork being slow cooked.
ONE IMPORTANT NOTE-- Make Emeril's Essence Creole seasoning BEFORE you start anything else and then put it aside. THEN make the rub recipe. You will be adding additional seasonings to the Essence creole seasoning to make the rub.
This recipe has a wonderful apple cider tang and a "kick" to it. If you love Carolina-style BBQ (and I do then you will treasure this recipe!

Im from Ireland and pulled pork is not really done over here so the oven method was perfect for me. I made everything up exactly as Emeril had instructed and OH MY GOD it was fantastic!!! Everyone raved about it. The rub was amazing and the bbq sauce with the vinegar hit on top of the sweet and spicy pulled (absoloutely fall apart pork was beautiful, such a compliment to the meat. Any party i go to now im instructed to bring my pulled pork haha. Thanks you Emeril for a fool proof delicious recipe i will deffinately be using again and again.

Made this recipe using my slow cooker and cooked the meat for 7 1/2 hours to make sure it would be tender and be able to be "pulled" apart. Well, there was no "pull"ing it apart; had to slice it instead. Also, after tasting this to see how it was, I was disappointed. It was way too spicy (and I've had spicy food before. Except for using the slow cooker, the directions were followed. Mopping sauce was way too vinegary. Definitely not making this again.

I used the crockpot with the mopping sauce and added onions. It was very tasty. The BBQ sauce was too vinegary for us so we substituted it with another recipe.

Not a fan of slow cookers so made this in the oven...fantastic! 8 lb shoulder, covered, basted 8 hours. BBQ sauce...thank you, thank you. Just like the pulled pork finishing sauce we remember from when husband was stationed at Fort Campbell, KY. Perfect.

Huge Hit! From the first time I made it at home, to the next time at the Firehouse! I have shared this recipe many times at the request of many who have joined us for dinner! One of the best things I like about it is, smoking it outside for 8 hrs. Funny I've met so many of my neighbors on those days, and made lots of new friends!

OMG! So tender and juicy, didn't need to add the BBQ sauce before putting on the sandwiches!!!! My pork butt was almost 5 lbs...so, roasted for 8 hours... Will say the BBQ sauce was a bit too vinegary for hubby, but I liked it...did add extra spice since we like it spicey! As well with the slaw....1/8 tsp cayanne pepper wasn't enough! And, only added 3 tsp celery seed....4 just looked like it was going to be too much.

**This is regarding only the cole slaw recipe**
I made the cole slaw to accompany Alton Brown's Rub #9 that I put on a boston butt to make into BBQ sandwiches tonight. I would pay for this cole slaw. I am NEVER attracted to cole slaw at markets, and certainly do not feel like cole slaw is worth putting in the effort to make...but this is a treat. I'm eating a bowl of it to hold me over, with all the incredible aromas in the house right now.

I also made this in the slow cooker. It cooked for 7-8 hours with the mopping sauce. I added Jack Daniels Honey Brown Sugar BBQ sauce because I was worried about the vinegar. It came out great! I halfed the measurements for the BBQ sauce and added more sweet BBQ sauce and extra brown sugar (again, worried about the vinegar. My husband said it was the best BBQ sauce he ever had! Emeril's was the base and we loved the kick from the red pepper flakes. We will definitely make this one again!

Made this in a slow cooker for 8 hours and it was fantastic!!! I just poured the mopping sauce in the slow cooker and went to work. The slaw was great on the sandwich or by itself. I'm definitely making this again.
