    I came across this recipe by chance, made it for dinner last night, and we were blown away. It was soooo easy to make and absolutely delicious! I have two young girls, so I omitted the habanero pepper, substituted Emeril's Bayou Blast creole seasoning for the Essence (just because that's what I had on hand, and used only 2T of kosher salt for the pasta water. Other than that, I followed the recipe as is and it was awesome, I will definitely make this often. Thanks Emeril!!

    This is a terrific recipe. It's great as-is, or can be varied in so many different ways. I added a small habanero pepper from my garden to kick it up a notch (or 10!!. Instead of chicken breast, you can use the more flavorful boneless skinless chicken thighs. You can also add andouille sausage as well as shrimp. Just remember to add the shrimp towards the end so they don't get tough. As soon as the raw color disappears, the shrimp are done perfectly.

    I added 2 chopped jalapenos and chopped cilantro rather than fresh parsley leaves. Cilantro has better flavor than parsley.

    Can I just say.....AMAZING!!!! I brought this to my mother-in-laws surprise birthday dinner and it was a hit with the family. I can't wait to make it again. Only thing I changed was I left out the Peppers and I used Rotel instead of plain diced tomatoes.

    This is absolutely delicious!! More spicy than I expected, but it was a pleasant surprise because I love hot foods. Will make again! And it didn't take long!

    This dish is a huge hit with everyone! It takes a little time to prep, but is more than worth the effort. I downloaded the recipe in 2007 and continue to have request for "that amazing chicken/pasta dish!" Thanks Emeril!
