This is a good recipe with lots of flavor! However, I found the prep time to be very misleading. Once the potatoes and chicken are cooked, the sausage is diced up and the sauce is made, it takes about 10 minutes to finish up.

Heaven in my mouth. I didn't see the sauce piquante until I was through with my prep, so I had to make do with what I had in my pantry. We didn't have jalapenos, celery, thyme or bay leaves. Yet the sauce was still fantastic. I used canned whole tomatoes in the sauce and didn't seed (I am not that patient. It worked well! This is definately a keeper for a lifetime. The flavors are remarkable. Next time, I will prep the night before in order to save time for the morning.
