    It was very easy to put together. I'm new to cooking home cooked meals, so I found this recipe very easy to make.

    My husband and son loved it! My husband said that it was the best beef stew he has ever had. I added fresh onions with the rest of the vegetables instead of the frozen pearl onions since my grocery store doesn't carry them. It turned out great!

    My husband has never enjoyed when I made beef stew until this recipe came along. I've always made my grandmother's recipe and enjoyed it myself mostly because it tasted like hers and it was what I expected. My husband said "you should make beef stew like this more often!" Emeril's recipes are always a hit in our home. I used red potatoes instead of new because that's what I had on hand. I left out the peas and used a yellow onion instead of the pearl onions (of course then you have to add in the beginning. I also made homemade bread bowls to put the stew in and we have had it for dinner, lunch and dinner again!!! Thanks Emeril!

    the only alteration i made was to add about 1/2 a bag of sundried tomatoes and instead of the pearl onions, i used fresh cippoline onions. i cooked the stew on high for 3 hours then turned it back to low for the last 4. since i like my onions soft, i added those with about 2.5 hours left of cooking.

    I made this recipe over the weekend -- a double batch -- and it is the best stew I've ever made. My family and friends loved it.

    I was looking for a way to make stew without using a store bought flavoring packet, and found this recipe. It was very easy to make, and I also changed some ingrediantes to fit what I had on hand. I omitted the mushrooms and used tomato sauce instead of paste. I also just chopped up onion. It tasted so good that even my kids ate it. They had been complaining when they heard I was making stew, but were willing to try it when they heard it was Emeril's recipe.

    I must admit however, that I have made some modifications to suite my families palate. I have added more wine and left out the mushrooms. I also added peas and biscuits. But the herbs and other spices are great. I really wanted something for the crock pot and this fits the bill. Thanks Emeril.
