    My husband is a meat and potatos guy. He asked me to make him beef stew. I hate beef stew. It's generally just a bland pile of mush to me, but not this recipe. It was so flavorfull and packed with veggies. I loved it. Because of this recipe, I can add beef stew to the list of things I will eat.

    Only two negatives:
    1 Recipe gives prep time as 10 min and I found it took more like 20. I don't have a sous chef! :-
    2 I found the gravy was a little thin so I mixed 1/4 cup flour with some water and added it to the pot 3 hours into cooking. Gravy thickened up nicely.

    This was the best beef stew I have ever had!!! I could not put in all of the Essence, a little too hot for me, but it was great!!

    Emeril, like all the other celebrity chefs, need a 'reality check" with their
    recipes. 1 cup of carrots??? What do I do with the rest??? It's only sold in one pound bags. One tablespoon of fresh parsley??? What do I do with all thats left over???? He has no idea about creating recipes to save money and work with what you have. I would love to challange him to a so called
    "Iron Chef" style cook off of with food that was bought on sale because of little money and one has to get by with it. I think he would be lost.

    HAD MY BEST FRIEND & HER HUSBAND OVER FOR DINNER & WANTED TO TRY OUT MY NEW SLOW COOKER. DIDN'T KNOW WHAT TO MAKE SO I WENT ONLINE TO THE FOOD NETWORK. SAW EMERIL'S BEEF STEW RECEIPE FOR THE SLOW COOKER.(NEVER MADE BEEF STEW BEFORE THE ENTIRE MEAL CAME OUT DELICIOUS!! THEY TOTALLY LOVED IT!! MY HUSBAND CAN'T WAIT FOR ME T MAKE IT AGAIN. THANKS EMERIL!

    This dish was so nice to come home to after a long day at work. The entire family loved it, including my 4 year old. Makes great leftovers also. Caution: 7 hours on high was way to hot. Luckily my mother who was at my home that day noticed, and turned the slow cooker down to low after 3 hours of cooking.

    I love Emeril and usually think he hits a homerun, but this was just not good. Easy, tender meat, but no flavor. It just needed more of something, maybe tomato paste or bouillion.

    This was the first recipe I tried in my new slow cooker, the KitchenAid 7qt. slow cooker. Love Emeril. After reading all of the great reviews, I just had to try it, but I don't know what I did wrong....

    Only one previous reviewer complained about the directions and turning the slow cooker to low after the first hour, so I decided to keep it on high as directed for the complete 8 hours. After 2 hours, it smelled awesome. After 5 hours, I noticed the liquid had really evaporated but I didn't want to open the cover and add more stock, a no-no, so I let it continue for the full 8 hours. When I opened the cover, there was no liquid and just a thin layer of oil on the bottom and some of the meat was burned and stuck to the sides. The flavor was good, the meat tender, but the veggies terribly mushy, and no liquid. What a disappointment?

    I have heard that the new slow cookers are more hot than older models. Was it me, or was I supposed to turn the slow cooker to low after the first hour? Please let me know if you have better success than I?..
