I made this last night and it was wonderful! We ate it over egg noodles. I wish the sauce was a little thicker, but the taste reminded me of home...and the smell in the house while it was cooking was a treat in it self! Love you Emeril!

We just love this stew! It is full of meat and veggies. Even though I do have to wake up a little earlier to get this one ready for the slow cooker it is definitely worth it in the end! I added some corn, celery, and onions to mine. Tastes Wonderful!

I didn't have everything on hand to make up some of Emeril's Essence, but a bit of Penzey's Beef Roast seasoning with a sprinkle of cayenne pepper worked great.
I'm not fond of mushrooms, but i always make a recipe exactly the first time around, and it came out great - next time i'll still make it with the same amount of mushrooms. The meat was sooo tender... It went great with some cornbread muffins on the side too!
